i know! more food. i can't help it. my life seems to revolve around eating anymore. so bear with me ;)
since our topsail trip with daniels family this past may, i've been majorly craving the shrimp & grits we had on our family dinner out - so rich & delicious :)i found a food network recipe & made a few changes to make it more like what we had & it was pretty dern close.
for the grits:
3 cups chicken stock/1 cup water
1/2 cup of whole milk or whipping cream
1 cup of yellow stone ground grits
salt & pepper to taste
1 tablespoon of butter
1/4 cup of parmesan
for the shrimp:
2 tablespoons of butter
1 small onion
3 cloves of garlic
1 bell pepper, chopped
1/2 pound of smoked sausage, sliced
1 1/2 pounds of shrimp, peeled & deveined
1/4 cup of dry white wine
1/3 cup of sun-dried tomatoes
no.1 in a large saucepan, bring chicken stock, water & milk to a low simmer & wisk in your grits.
no.2 stir often until thickened {your grits should have a definite substance to them, but not be super thick. if they are, add more stock.} & add salt & pepper, butter & parmesan. turn off heat & cover until ready to serve.
no.3 with a large pan over medium heat, add butter & saute onion, garlic & bell pepper until tender.
no.4 add sausage. once it has cooked all the way through, add shrimp & saute for another 2 or so minutes.
no.5 add wine & sun-dried tomatoes. season with salt & pepper & serve over grits.
{p.s. the wine belongs to husband. i really have been a good girl the past 7 months…}

Mmm! It's so funny, the grits section at the store is HUGE here! It's a good 4 foot wide section of the entire height of shelves. haha...
